1 large red pepper
300 g broccoli — fresh or frozen (I cooked from frozen)
2 tbsp olive oil
0,5 tsp salt
1 tbsp fresh lemon juice
small handful of roasted almonds
1.Pepper cut into strips of width 1 cm.
2.Fry them in olive oil on medium heat until the peppers become soft crispy.
3.Remove the peppers to a plate.
4.Broccoli not cut very finely.
5.If you are using frozen broccoli, pre-defrost it and season with salt, then fry until soft in the same oil, where was roasting peppers. If the cabbage is fresh, you’ll need to stew on low heat with 3 tablespoons of water for 2-3 minutes and then increase the flame and fry for another 5 minutes until they become soft.
6.Nuts finely chop.
7.Pepper and broccoli, put in a salad bowl, sprinkle with nuts, pour lemon juice and mix.
