«Puff» eggplant
You will need:
Eggplant (medium size) — 2-3 pieces.
Tomato — 1-2 pieces. (can substitute tomato paste — 2 tbsp. l.)
Carrots — 2 pcs.
Onions — 3 pcs.
Vegetable oil — for frying.
A bunch of parsley
Salt and black pepper.
For the sauce, mix in a blender:
Sour cream — 100 g
Nuts — 30-50, the
Garlic (for vkusku).
Preparation:
Eggplant cut along the plates (without clearing the rind). Season with salt and leave for 30 minutes, then rinse in cold water.
Fry the eggplant plate on each side in vegetable oil. Share on a paper towel to remove excess fat.
Chop finely the onion, tomatoes — diced (or tomato paste), carrots grate. All this send to the pan, season with salt and pepper and put out with water until moisture is gone.
Then, each slice of fried eggplant spread with roasted onions, carrots and tomatoes.
Lay slices smeared so that once turned a eggplant.
Put in a baking dish, pour 1 tbsp vegetable oil and bake for 10-15 minutes at 180 degrees.
