New York cheesecake with cherries


For the dough:

Chocolate or vanilla crackers — 240 g
Butter (melted)— 8 tablespoons
Sugar-1/2 Cup
Salt — 1/4 teaspoon

Cream cheese — 240 g
Sugar-1 3/4 Cup
Flour — 3 tablespoons
Lemon (zest) — 1 teaspoon
Orange (zest) — 1 teaspoon
5 eggs
Large egg yolks — 2 PCs
Vanilla — 1/2 teaspoon

For the top:
Sweet or sour cherries pitted — 300 g
Lemon (juice) — 2 tablespoons
Sugar-1/4 Cup
Starch — 1 tablespoon
Water — 1/2 Cup
